Keto Flaxseed Bread Rolls - Divalicious Recipes (1)

After dropping the husband off at the airportthis week,my mind wandered to what I could bake that I enjoy and he wouldn't. I love flaxseed bread which he is not as keen on so thought I would try this in roll form and add psyllium husk powder to make it a bit more "bread-like". I was so delighted with the results that I shared it immediately on Facebook and the response made me push this recipe at the top of the list to publish.

Keto Dinner Rolls

This keto flaxseed bread recipe makes for great dinner rolls. They are great split and served with a filling or serve with a side of soup. Serve warm with a pat of butter.

Carbs in Flaxseed

Flaxseeds are low in carbohydrates. Here is the approximate carbohydrate content in flaxseeds:

Whole flaxseeds: About 7-8 grams of carbohydrates per 2 tablespoons (20 grams).
Ground flaxseeds (flaxseed meal): About 4-5 grams of carbohydrates per 2 tablespoons (13 grams).
The majority of the carbohydrates in flaxseeds come from dietary fiber, which can be beneficial for digestive health and may help control blood sugar levels.

Carbs in a bread roll

The carbohydrate content in a bread roll can vary depending on the size, type of bread, and the recipe used to make it. On average, a typical white bread roll (about 1 ounce or 28 grams) contains approximately 15-20 grams of carbohydrates.

A great contrast to this recipe which has just 2 grams net carbs per bun.

Ingredients

Just a few low carb ingredients make these keto buns.

Keto Flaxseed Bread Rolls - Divalicious Recipes (2)
  • Ground flaxseed - you can grind your own or purchase it from stores.
  • Eggs - we use a mixture of egg whites and yolk for a light bread.
  • Psyllium husk powder - helps to bind the bread rolls in absence of gluten.
  • Apple Cider Vinegar - use organic with the "mother". Check the labels.
  • Olive oil - coconut oil could be substituted.

19g of carb for one roll??? I do not consider that low carb!!!

    Reply

The net carbs will be the total carb count minus the fibre count. Each roll is 2g net carbs.

I want to try your recipe but I would like to know what's the reason behind using ACV in the recipe. Thank you for your response

    Reply

    • Angela Coleby

It acts as a raising ingredient along with the baking powder. When you are baking without gluten or yeast, you need another way to make the bread rolls rise.

I made these and they turned out beautifully but too fishy for me. I did it again and substituted ground hemp seed and baked it 40 minutes in a loaf pan. Delicious

    Reply

    • Angela Coleby

I like the idea of ground hempseed. Flaxseed can go rancid if not stored correctly, so it may be the result of the flavor.

These are awesome! I've been looking for something like this for years. I've tried sooo many other recipes using almond and coconut flour and usually never care to make them again. For some reason, the idea of flaxseed didn't interest me. I just had an egg salad on one of these buns that was very filling and satisfying. I will definitely make them again.

    Reply

    • Angela Coleby

If the buns appear to have large hollow bubbles inside, it may be due to the psyllium. Make sure you use powder, not whole husks. Otherwise, use a coffee grinder or blender and pulse until fine and powdery. Use whipped egg whites to make these fluffier.

Is there something I could replace the ACV with? My husband cannot have ACV (I know it sounds wrong but it’s the truth. Lol). I saw that you said don’t use white vinegar so I thought I’d ask. Thanks

I've heard of some people not being able to have ACV. White wine vinegar might work without changing the flavour too much.

These are SO wonderful! Just perfect for a quick sandwich, a slab of marinated tofu with lettuce and tomato or a burger! They are light and tasty but they don't fall apart on you midway through your meal! I made another batch today. I do make them a bit bigger though - 5 instead of 6. (I prefer to have one that's a bit bigger than to go for a second one!) I also added 2 tsp of monk fruit sweetner to the mix of this last batch.
For me, the test of good bread is: Is it tasty and satisfying with just butter? Well, you know the answer to that one with these lovelies!
    Thank you, Angela!

Thank you so much for this recipe! I can't get enough these flax bread! I have made them 3 times and they are so versatile both in shape and taste! I made them in to rectangles for sandwiches and circular with avocado or PB and apples. This recipe was exactly what i was looking for when I discovered how much sugar was in loafs of bread. One question though, the insides of my bread dont get fully cooked each time I bake them. So, my solution was to cut them in half and put them back in the oven. Any other suggestions or what I could be doing wrong?

Thank you so much for this recipe!

Hi, Can u tell me where I can get the psyllium hucks powder and Flax meal from that is NOT expensive? I'm on a fixed income. Thanks...........

    Reply

    • Angela Coleby

I get my psyllium husk powder from a chemist under the "colon cleansing" area. It's normally cheaper than the health food shops. For the flax meal, look at the supermarkets for packets of linseed. This is the same as flax seed and can be ground down to the meal/flour using a coffee grinder. Sometimes they have the packets in a ground form too. I've noticed that the packets are smaller and cheaper than purchasing a large bag of flax meal. Perhaps have a look at Amazon too?

I found m local grocer sells flax meal under their organic brand for about $2.99lb - if you've got a kroger, or one of their subsidiaries company's around check there

Also if you local grocer sells bob's red mill, they've got some for pretty cheap to.

I've been looking for some good recipes for flax flour and other wheat alternatives. (I grind my own gold flax seed, but grind it fine instead of coarse.) Coconut is the next less expensive and available to me. I've used a basic flax recipe to make muffins, but this site appears to have the best alternatives for something I can use for sandwiches - can't give them up! So I'm going to try both the flax and coconut flour recipes here.
I have one question though. I take daily doses of unfiltered apple cider vinegar for my blood sugar. Is this the ACV that you are referring to when you list Apple Cider Vinegar? It's what I'd prefer to use.

Heya! Love your recipes! Saw this one today and tried it immediately! Just a couple things--
2 cups flax meal came to approx 200g for me. How did you get 330g?
Also my macros for 1 bun via MFPwas-
    Cals- 169
    Fat- 14.5g
    Protein- 6.1g
    Total carbs- 5.2g
    Fibre- 4.3g
    Net carbs- 0.9
Can there be such a vast difference?
I make my own ground flax meal at home with roasted flaxseeds.
    Little confused ?
    Thanks! ☺️

I just used an online converter for the flax seed as I use cups. Wonder if there is a density difference to the information that I found online? The nutritional information comes from nutritionselfdata.com and might vary due to brands of ingredients used perhaps?

    • James Honse

Right on the package of Bob's Red Mill Golden Flaxseed: 3 tbsp = 31 g (and 2 net carbs). There are 16 tbsp in one cup, so one cup would have 165 g. 2 cups = 330 grams. Don't know what you bought, but the math is the math.
