Unlike on low fat diets, the more fat you eat, the more body fat you lose. So Ket dieters often eat bite sized balls or cubes of high fat content ingredients called fat bombs.

How do you make these Keto Cheesecake Balls?

These no-bake cheesecake balls are very easy to make. You start bymixing all the cheesecake ball dough ingredients together and rolling them into balls. Then you freeze the dough balls for 10 min. You mix the unsweetened shredded coconut with erythritol sweetener, and then roll the dough balls in the coconut mixture. And you are done!

They are based on a recipe for Keto Lemon Coconut Balls that I found on Mouthwatering Motivation.I upped the citrus flavor by adding in lime juice and zest, so they've got a subtle citrus flavor and a smooth creamy texture.

Ingredients

Scale

dough balls:

3 oz cream cheese

1 teaspoon full fat sour cream

2 teaspoons fresh lemon juice

2 teaspoons lemon zest

1 teaspoon fresh lime juice

1 teaspoon lime zest

½ cup plus 2 tablespoons super fine almond flour

3 tablespoons Swerve or equivalent granulated sweetener

½ teaspoon vanilla extract

coconut coating:

2 tablespoons unsweetened shredded coconut

½ tablespoon Swerve or equivalent granulated sweetener

Instructions

1. Add all dough ball ingredients to a medium sized bowl and mix well to combine.

2. Freeze the dough for 10 min.

3. Mix coconut and sweetener on a small plate or bowl.

4. Remove the dough from the freezer and roll it into 6 small balls that have 2 tablespoons each.

    I usually make the fatbombs that are without the almond flour but these are AMAZING!! The almond flour gives it a mixed in crust texture almost and I like that I can just keep these in the fridge and they are soft. Really great recipe. It's a KETO KEEPER!!!

    I am thinking about making these for my son's wedding reception at church. How far in advance can I make them and how do I store them?

      Well, the lemon lime bites are primarily made of cream cheese, and opened cream cheese lasts up to 10 days. I'd make them closer to the day though, so they are relatively fresh. Do not freeze them though, because that will completely change the texture of the dessert. And congratulations to your son!
