Today I'm going to show you how to make the noodle dish that is beloved by college kids the world over. Good old ramen noodle soup. So comforting, so easy to make. Just boil water and mix it with the uncooked noodles and that neon yellow flavor packet. Heaven. But the instant version isn't so Keto-friendly, so we'll need to improvise.

So let me show you how to make a quick Keto Ramen Soup.

I like to keep my Keto Ramen simple, but you can get fancy with your ingredients if you like. You can add sauteed veggies like shiitake mushrooms, bok choy, cabbage, carrots, zucchini noodles, chilies, red peppers, garlic, ginger, bean sprouts, and pre-cooked spaghetti squash. And you can spice it with a few sprinkles of onion powder, garlic powder, ΒΌ cup of miso paste, or chili sauce as desired. All these ingredients add flavor and texture to the dish but are purely optional.

For this Keto Ramen Soup, I replaced the classic wheat flour ramen noodles with zero-carb, zero-calorie shirataki noodles. These noodles often go by the name β€œMiracle Noodles” because they seem too good to be true. The secret to shirataki noodles (also called konjac noodles) is that they are completely made of fiber, so the 1g carb per serving gets canceled out by the 1g fiber.

Which one to choose?In case you haven't heard ofcoconut aminos: it’s a dark sauce that tastes very similar to soy sauce. But instead of being made from wheat and soy, it’s made from the sap of the coconut plant. The sap is fermented until it has a nice rich salty flavor. This faux soy sauce is lower in salt and can be eaten by people who eat gluten-free, wheat-free, and soy-free.

Wait- soy sauce has wheat in it?

Yes, wheat is actually the main ingredient in soy sauce. It’s made from soybeans, wheat, salt, and a fermenting agent. The sugar is eaten up in the fermentation process, but you know, it's still made from wheat. So while it is technically low in carbohydrates, if you are a Keto stickler, you may want to go with theCoconut Aminos in your Keto Ramen.

But if you only have soy sauce in the fridge, then just use that.

I just want to take a minute to sing praises of the rotisserie chicken. It's so salty and so delicious and so ready at the exact right time. (When you cook a chicken, it never takes as long as you imagine it will!) And I just can't wrap my head around the fact that you can buy a perfectly cooked and seasoned chicken at the grocery store for less than it costs to buy an uncooked chicken. Just... how?

  2. Pull the rotisserie chicken into bite-sized pieces.
  3. Slice scallions diagonally into 1 inch long pieces.Use the dark end as well as the light ends.
  4. Add shirataki noodles to a colander and rinse with water.
  5. Add shirataki noodles and chicken to the hot broth and cook until they are heated through.
  6. Compose 4 large bowls of soup, adding ΒΌ of the noodles, broth, scallions, and eggs to each bowl.
  7. Garnish the Keto Ramen with cilantro leaves and serve immediately.

Instant Pot Eggs:Add 1 cup water to the pot, put the eggs on the rack, and pressure cook on High for 4 minutes. Quick-release the steam and take out the eggs. Submerge eggs in cold water and peel them when they are cool enough to touch.Slice eggs in half.

Stovetop Eggs: Add eggs to a medium-sized saucepan and fill with water to 1 inch above eggs. Bring to a rolling boil over High Heat.Lower the heat to Medium and boil for 5 minutes. Submerge eggs in cold water and peel them when they are cool enough to touch.Slice eggs in half.
