Chickpea Cookie Bars Recipe
Let’s say you want a cookie but the quick baking one, how about it will be ready in less than 30 minutes? Sounds fast enough, right?
But here is the bonus, it has a hidden treasure on it, instead of the flour for the main ingredients, we use chickpea on it. Nobody will know what hiding in the cookie is. Everyone will be surprised when you tell them it is a chickpea cookie.
Yes, that is what happens when I finish baking this cookie bars. Everyone was surprised because they can’t taste any difference between regular cookie using flour and cookie using chickpea. It sounds like it is the baking win for us, right?

Ingredients
- 1can (28 fl oz)chickpea
- 2/3cupsugar
- 4eggs
- 1cupchocolate chip
- 2tbspnon dairy milk
- 1/2tspvanilla extract
- 1/2tspsalt
- 1/2tspbaking powder
- 1/2tspbaking soda
- 1/2tspcinnamon powder
Instructions
Preheat oven to 350°F. Prepare the sheet pan layered with parchment paper.
Put the chocolate chip and Dairy free milk in the bowl. Heat it up in the microwave until chocolate melt about 30 seconds, whisk it with a spoon to get the smooth melted chocolate.
Put Chickpea and eggs in the food processor, process until chickpeas smooth.
Add the rest of ingredients except the melted chocolate chip. Process until well blended, take about 5 tbsp of the dough to the bowl, set aside.
Add the melted chocolate to the food processor, process it until well blended.
Pour the chocolate dough into the prepared pan. Spread it with spoon or spatula.
Put the white dough on top of the chocolate dough, spread it with the spoon to resembles the marble pattern.
Bake it in the oven for 15 minutes, let it cool for about 5 minutes before you cut it up into bars.
I use a sheet pan because it will be thin cookie bars after I cut it up, but if you would like to get a thick bar, bake it on the 8-inch x 8-inch square baking pan for 15 to 20 minutes.

I didn’t try to use flax egg for this recipe yet, but I use flax egg a lot for my baking, so I don’t see why not, use 1 flax egg to equal 1 egg, and please let me know how it goes.
