Beef: use an 85/15 ratio for the best flavor and less fat.

Spaghetti Noodles: regular spaghetti noodles work best,

Sour cream: keep this recipe light by using light sour cream.

Cream cheese: choose ⅓ less fat cream cheese

Cheese: Buy the brick cheese and shred it yourself. Cheddar cheese gives great flavor here, but if you're inclined to want to use a softer cheese, then mozzarella works great also.

🔪 Instructions

  1. Preheat the oven to 350° F.
  2. Cook spaghetti according to package until al dente. Drain and set aside.
  3. In a large skillet over medium heat, saute the onion for 3 minutes, until it begins to look translucent.
  4. Crumble and cook ground beef into the skillet and cook for 5 minutes, until the beef begins to brown. Drain the fat from the skillet and stir in the salt, pepper, and spaghetti sauce. Bring the meat mixture to a boil, reduce the heat, and simmer for 10 minutes.
  5. Add the sour cream, green onions, and cream cheese to a medium bowl. Using a hand mixer on medium speed blend the cream cheese mixture until smooth and creamy. Set aside.
  6. Transfer the cooked spaghetti noodles to a 1-quart casserole dish coated with nonstick cooking spray. Spread the sour cream mixture over top of the spaghetti noodles. Spread the meat mixture over top of the cream cheese mixture. Sprinkle with the cheese.
  7. Cover and bake at 350° for 25 minutes. Uncover, sprinkle with a little extra cheese if desired, and bake an additional 5 minutes or until cheese is bubbly.

  • Skip the sour cream and cream cheese and use 1½ cups ricotta cheese. Whisk an egg into the cheese mixture along with a teaspoon of Italian seasoning and ¼ cup parmesan cheese.
  • Substitute sweet or hot Italian sausage crumbles for the ground beef. This also will work well with ground turkey.
  • Whisk one egg and ¼ cup grated parmesan cheese together. Stir it into the cooked spaghetti noodles. Then place the spaghetti mixture into the casserole and proceed with step 5.

Cooking Spray: To keep the noodles from sticking to the casserole dish.

Aluminum Foil: Used to Cover the casserole dish.

    You're right! I haven't made this in awhile either, but it is really good food! I don't make as much pasta as I did during the 80's and 90's. But back then we were young and invincible to carbs!! Every now and then is still fine though.
