I love a recipe that I can have ready almost any time because I have the ingredients on hand and it’s so impossibly easy.

This berry cobbler with sugar cookie topping is one of those recipes.

It sounds super fancy and complicated- I mean a berry cobbler topped with sugar cookies!

Who doesn’t want that?

But in reality it’s incredibly easy to make so you can have a company worthy dessert ready at the last minute for unexpected guests.

Ingredients

You only need 4 ingredients to make this:

  • Berries– Frozen mixed berries of any blend you prefer.
  • Cornstarch– To thicken the juices the berries will release
  • Sugar cookie mix– A 17.5 ounce package
  • Butter– A whole stick of salted butter, melted.

How to Make

To make this easy sugar cookie berry cobbler, just spray a 9×13″ baking dish with non stick cooking spray.

Then, spread the frozen berries out in the prepared dish.

Sprinkle the cornstarch evenly out overtop and stir to combine.

Spread the berry mixture back out into an even layer.

Whisk the cookie mix and melted butter together in a mixing bowl just until evenly combined.

Spoon dollops of the cookie dough mixture evenly out over top of the berries until it’s all been added to the baking dish.

Bake the cobbler at 350° for 40-45 minutes, or until the fruit is hot and bubbly and the cookie crust is golden brown.

Carefully remove the hot dish from the oven and let it rest for 5-10 full minutes.

Serve warm with scoops of vanilla ice cream or whipped cream.

Storing

I don’t recommend planning to have leftovers of this.

The sugar cookie crust will get soggy.

Tips and Tricks

  • I used a frozen berry blend made up of blackberries, raspberries, and blueberries but feel free to sub with whatever frozen berry blend you prefer.
  • Do Not skip the rest time. The rest time lets the fruit set up so it isn’t runny when scooping.
  • This doesn’t do well when prepared ahead of time as the crust will get soggy. Make it just before serving.

  • 2 lbs frozen mixed berries
