INGREDIENTS

So, you'll need a few common keto ingredients and a few specific ones for creating maple syrup.

Here is what you'll need:

  • ¾ cup Brown Swerve
  • ⅓ cup Confectioners Swerve
  • 2 ½ cups water
  • 2 heaping tbsps. maple extract
  • 1 teaspoon butter extract
  • ¼ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 teaspoon xanthan gum

Ok, so we will be making a sugar-free maple syrup recipe that tastes like it's straight from a maple tree.

And to do this, we will be using a combination of Brown Swerve and Confectioners Swerve. Both are 0 calorie and 0 sugar sweeteners that will add the perfect sweetness to this syrup.

Now, you can substitute the Confectioners Swerve with Lakanto's Powdered Monkfruit Sweetener, and you'll get the same amazing result.

However, I do not recommend substituting the Brown Swerve with another sweetener - I've found that it is by far the best brown sugar replacement and works really well in this recipe.

HOW TO MAKE KETO PANCAKE SYRUP

In just a few easy steps, you'll have ridiculously good maple syrup that will change your keto breakfast forever.

And this recipe will make a couple of bottles worth of syrup, so make sure you have some empty ones on hand!

Now, I know you're ready for some maple goodness, so let's get to it.

STEP 1: BOILING YOUR SYRUP

The first thing you will do is take out a medium-sized pot and add your brown swerve, confectioners swerve, and water to it.

Then mix those ingredients with a spoon and put your pot on a burner over medium heat.

Next, bring this mixture to a boil, and you'll want to stir your ingredients occasionally as you're waiting for it to boil. And then once it boils, turn the heat down to low.

STEP 2: COMBINING THE OTHER INGREDIENTS

Ok, so your pot should be over low heat. Now you can add your maple syrup extract, butter extract, vanilla extract, cinnamon, and salt to the pot.

Then, take out a whisk, and whiskify the ingredients you just added together until they combine with the water-sweetener mixture.

When they do, add your xanthan gum to the pot to give your mixture its syrupy consistency. Then, after you've done that, you can turn your burner up a couple of notches and continuously whisk everything together for a couple of minutes.

Next, take your pot off the heat and set it aside for around 30 minutes so it can cool down to room temperature.

STEP 3: FINISHING YOUR MAPLE SYRUP

Once your maple syrup has cooled to room temperature, use a funnel to pour it into empty maple syrup jars.

And again, this recipe will make multiple jars of keto maple syrup, so you're going to need a few jars.

Then after the syrup is in the jars, you can put it in the fridge to cool down even more.

While the syrup is cooling in the fridge, you might get some crystallization from the Brown Swerve.

But not to worry, it's super easy to get rid of that - all you have to do is add some of the maple syrup to a bowl before you use it and then warm it up in the microwave for about a minute.

Ingredients

¾ cup (170g) brown swerve

⅓ cup (50g) confectioners swerve

2 ½ cups (600 mL) water

2 heaping tbsps. (26g) maple extract

1 teaspoon (5g) butter extract

¼ teaspoon vanilla extract

½ teaspoon (2g) cinnamon

¼ teaspoon salt

1 teaspoon (2g) xanthan gum

Instructions

  1. Add brown swerve, confectioners swerve, and water to a medium-sized pot. Mix ingredients with a spoon and put on a burner over medium heat.
  2. Bring mixture to a boil and stir ingredients occasionally while bringing to a boil.
  3. Once it boils, turn the heat down to low. Add in maple syrup extract, butter extract, vanilla extract, cinnamon, and salt.

  5. Continuously whisk everything together for a couple of minutes.
  6. Take the pot off the heat and set aside to cool to room temperature (about 30 minutes).

  8. Put in the fridge to continue cooling. (If syrup crystalizes while cooling, add some maple syrup to a bowl before you use it and microwave for about a minute).
